The leaves are collected from a special broad-leaf tea tree and go through two types of fermentation. This process gives the tea a mild, but distinctively earthy flavour and makes it much lower in tannins than other teas. Puerh teas are much like fine wines, becoming smoother and more balanced with age. To brew, use water at 95-100°C. Generally, 3-5 grams of tea is proper with 150 milliliters of water. Warm the tea by pouring out the boiled water immediately for the first one to two times. Then steep for about a minute before pouring the tea soup into a cup.
